1-Gallon Pail – Shredded Coconut

I have a sweet tooth and always have to have dessert after dinner!  My husband will tell you that I have it after breakfast, lunch AND dinner!  If the treat has coconut as an ingredient – WATCH OUT!  It’s all over for me if coconut is involved!  Unlike most sweets that contain high levels of sugar, are high in fat calories and refined chemicals, coconut is highly nutritious and rich in fiber, vitamins, and minerals.

I just received a gallon tub of Organic Shredded Coconut from Tropical Traditions, so I wanted to get down to business and make a tasty treat that I could have for those times in-between meals, when my sweet tooth kicks in!

Coconut Honey Chia Balls

Ingredients:
1/2 C. Gold Label Virgin Coconut Oil from Tropical Traditions
1/2 C. Local Honey
2 C. Shredded Coconut from Tropical Traditions
1 C. Pecans
3 TBSP Ground Chia Seeds
1 tsp Pure Vanilla Extract

Directions:
If your coconut oil is solidified, simply place your jar in warm water or heat it up in the microwave to liquify.

Add the coconut oil, honey, vanilla extract, ground chia and then the shredded coconut to a large bowl.

Put your pecans in your Vitamix, or other powerful mixer, and grind them.  Add the ground pecans to the bowl.

Mix all of the ingredients together.  Once the ingredients are all mixed up, it’s hard to resist taking a bite, so go ahead – take a bite!  It reminds me of how yummy cookie dough is before you have to bake it!  While you might be tempted to eat the entire bowl of mixture, seal the bowl with plastic wrap and place in the fridge for about an hour or until the mixture is stiff enough to roll into balls.  With a spoon, scoop some of the mixture and roll into balls.  Keep the Coconut Honey Chia Balls in a glass container in your fridge and enjoy as a snack in-between meals!  They should keep for up to 2 weeks in your fridge.
